Description of Profession
A Butcher is a worker – artisan of meat who deals with the cutting of the carcass into pieces for wholesale or retail sale, boning, grooming and presentation for marketing-selling large and small ruminants of pigs, birds, (hens, turkeys, ducks, geese), packaging of meat in a controlled atmosphere or in a vacuum, the production of meat preparations in a laboratory or an adjacent butchery room. These tasks are aimed primarily to the sale of meat for consumers in a desired form and mostly exercised in the presence of the customer and his needs.
With regard to the exercise of the relevant profession, anyone wishing to exercise the profession of butcher is obligated under the law (PRESIDENTIAL DECREE 468/90, G.G.180/s/20-12-90) to obtain a certificate or certificate of competence Butcher.
For the butchers practicing before 31/12/1990 they need the Traditional Butcher’s Certificate.
a) Traditional Butcher:
For obtaining the title of a traditional butcher it requires a five (5) day training at the school of the professions of meat, provided that the person has worked as a butcher before the31/12/1990, which is evidenced with documents from TEBE, IKA, tax office, etc.
This option does no longer exist since 8/6/2008
For the acquisition of title of a butcher it is required that a candidate must have 300 hours (3 months) education from the School of meat profession.
Both above titles provide the same professional rights to exercise the profession.
Candidate obtains the certificate after passing the exam.
The certificate is valid for 10 years.
The certified professional obtains:

- - Professional ID card, a globally work asset
- - Self confidence
However it is worth noting that:
The European Accreditation Bodies have founded the European co-operation for Accreditation (EA), one of the main goals of which is to promote the international recognition of both the accreditation provided by its members and the accredited services by maintaining reliable multilateral agreements (MLAs). ESYD is one of the founding members of EA. Since March 2004, ESYD has become a signatory to the MLAs for Testing Laboratories, Calibration Laboratories and Inspection Bodies and since March 2005 for Certification Bodies for all provided services (persons, products, quality management systems, environmental management systems).
Through the co-operation between accreditation bodies at global level, accreditation recognition of MLAs signatories is expanded to most industrially developed countries, such as U.S.A., Canada, Japan, China, Australia etc.
ESYD regularly participates in the EA General Assemblies and in the meetings of the EA Committees for MLAs, Laboratories, Certification and Inspection Bodies. ESYD is a member of the International Laboratory Accreditation Collaboration – ILAC
